Yummy fall treat...

Pumpkin Streusel Bread:

 

Ingredients:
1 cup packed brown sugar
1/3 c. butter/margarine/shortening
1 cup canned pumpkin
1/4 cup milk
2 cups flour
2 eggs
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons cinnamon
Streusel topping ingredients:1/4 c. firmly packed brown sugar
2 tbsp. flour
1 tsp. cinnamon
2 tbsp. butter, softened
1/2 c. finely chopped pecans

Cream together brown sugar and butter. Beat in eggs. Add canned pumpkin and milk. Mix. In a separate bowl, mix together flour, baking powder, salt, baking soda, and cinnamon. Add flour mixture to pumpkin mixture. Mix. Place in greased loaf pan, or muffin tin or mini muffin pan.

Add streusel topping on the top of loaf. Bake in oven at 350 degrees for 55 to 60 minutes. Cool ten minutes, then remove from pan and cool on rack. May be frozen.
I like to make them in muffins or mini for bite size.
