Strawberry Cheesecake Cupcakes




Cupcake Ingredients:

1 box white cake mix
3 eggs
1 cup milk
1 tsp. vanilla

Cupcake Filling Ingredients:

1 pkg. {8 oz} cream cheese, softened
1 cup sugar
2 cups cool whip


Frosting Ingredients:

2 cups heavy whipping cream
1/2 cup sugar
1/2 cup powdered sugar
1 pkg. frozen strawberry slices {8 oz} or Fresh strawberries





Cupcake Directions:

Mix together cake mix, eggs, milk, and vanilla.
Pour batter in paper liners and fill 3/4 full.

Bake at 350* for 15-18 minutes or until cake springs back when touched lightly.
Remove from pan and allow to cool completely.
Peel off cupcake liners and throw away.
Cut each cupcake in half.

In a large mixing bowl, cream together sugar, cream cheese and cool whip.
Spoon filling in between the two cupcakes halves, sandwiching them together.  Do this to all cupcakes.

Frost.


Frosting Directions:

In a mixer, beat 2 cups of heavy whipping cream until light and fluffy,
Add both sugars slowly, while mixer is on low. Stop mixer.

In a blender, puree strawberries.

Add pureed strawberries to whipped cream. FOLD IN GENTLY.

Frost cupcakes.

These cupcakes are yummy!  So creamy, and fresh tasting. 

The fresh whipped topping with strawberries, is divine. They're delicious at room temperature, or cold from sitting in the fridge.

Note: You can put these back in liners if you want. I served them without the liners, on a tray, at the Super Bowl party. Either way works!

I look at delicious recipes like this and ask myself, "Why am I dieting again???" Mmm! They look so good!
